For almost the last year since adopting my cockatiel I've never really gone out of town, but recently I was on almost gone for two weeks and had a friend watch her. She stayed on her normal diet, had time out of her cage etc. Nothing really different from a normal day. But since I came back it seems she isn't eating as much as she was before I left and has been extremely "needy" squeaking more than usual when I leave the room or have to leave during the day. I'm thinking she is maybe stressed out over the recent change in my schedule, which isn't typical for me. She also has had slightly smaller, watery droppings. She was all about eating when I fed her earlier by hand and even ate some seeds too, but overall just seems like she is being a hog like she usually is. Could this really be just stress related?

It possibly could, but it sounds like you need a vet check to make sure there's nothing else going on. Stress can also bring out underlying illness.
