I'm eager to give my birds more variety of veggies and fruits! I'm pretty sure they can eat the same as adults being 8 weeks old, but just wanted to be sure in case there's anything they can only eat with more moderation or something. (or which veggies/fruits are most essential for their growing bodies.)

Been giving them lot's of carrots, lettuce, broccoli, peas, sometimes cucumber, and sometimes apple so far and they LOVE those. They don't seem to like bananas and oranges very much yet, but maybe those are acquired tastes. I just bought some pears, kale, dill, and bok choy for them to try tomorrow

With the exception of the things that birds just can't have (avocado, chocolate, alcohol, coffee etc, look up a list of non bird friendly foods for reference), feel free to give them anything and everything!

I love when people offer their birds a varied diet and don't just keep them on a seed-only diet. If they're weaned off formula, go for it!
